Quick Risotto For Dinner

I was busy as could be today – catching up business wise after being gone when I realized it was dinner time and someone needed to get it out there. So I looked into the cupboard and started grabbing items.

Sarah’s Quick Chicken Risotto:

1 package Trader Joe’s Mushroom Risotto mix

1 10-ounce can chicken breast

1 cup frozen diced onion

4 cups water

8-ounces frozen organic broccoli (half a bag)

1 cup grated Parmesan cheese (the good kind)

1 Tbsp olive oil

1 tsp dried Thyme

1/2 tsp diced dried garlic

Take a large heavy saucepan. Turn on the stove to medium high heat and get the oil warm. Toss in the onions and saute till they start getting golden. Meanwhile bring the water to a boil in the microwave. Toss in the rice and saute for a minute or two with the onion. Toss in the Thyme and Garlic. Stir up.

Drain the chicken, reserving said juice for two annyoing cats running between your legs. Slide bowl of juice over to them on the floor. Go back to work.

Dump in the chicken, breaking it up with spoon. Add in dry mix from risotto package. Add in boiling water and stir. Bring to a boil, lower heat to low and cook simmering gently for 20 minutes tightly covered. In last couple minutes steam the broccoli. Add in the broccoli and stir gently. Mix in the cheese till melty.

Serve up and chow down!
