Salsa Rice Bowl

Low fat and vegan if you leave the cheese off, even with a bit of cheese this recipe is quite healthy – a lot of fiber and vegetarian protein šŸ™‚ It also works well as a burrito filling with some more salsa, sour cream and maybe some guacamole.

Salsa Rice Bowl

Ingredients:

1 cup uncooked long grain rice

1 cup chunky salsa

2 tsp low sodium bouillon (any flavor)

1 14-ounce drained and rinsed black beans

1/4 cup frozen corn

1 Tbsp dried onions

Directions:

In a medium heavy saucepan bring two cups of water, salsa, corn, beans, onion and bouillon to a boil. Add in the rice, bring back to a boil and then lower the heat to low for 20 minutes. Fluff up and serve topped with grated cheddar cheese.

Serves 2-3.
