Chicken Stuffing Trash-er-ole

So what is a Trash-er-ole? A casserole of course….made the way Mom would have in the 1970’s. Just maybe with better ingredients these days 😉 Rib sticking, feeds a hungry family and does it for reasonable cost.

Chicken Stuffing Trash-er-ole

Ingredients:

1 12.4-ounce package cornbread stuffing mix (I used Trader Joes)

1 10 to 13-ounce can chicken, well drained

1 packet roasted chicken gravy mix

1 15-ounce can green beans, well drained

1 15-ounce can diced or sliced potatoes, well drained

1 cup frozen corn

1 cup diced onions, fresh or frozen

1/2 cup sour cream

1/2 cup Parmesan cheese

1 Tbsp olive oil

1/2 tsp dried Thyme

1/2 tsp ground black pepper (or to taste)

Directions:

Heat your oven to 350*.

In a large sauce pan, heat the oil up and saute the onions till golden.Once golden add in the vegetables and chicken. Turn off the heat.

Meanwhile prepare the gravy according to package directions in a small saucepan along with the Thyme and pepper. Once ready turn off the heat and add in the sour cream. Toss the gravy with the vegetable blend. Add in the Parmesan cheese then spread into a 13×9″ glass baking dish.

Prepare the stuffing mix according to package directions for baking. Drop the stuffing on top of the vegetable blend. Even out the stuffing so all is covered.

Bake for 35 minutes uncovered or until the sauce is bubbling.

Serves 4-6, depending on appetite.
