Spicy Jasmine Peanut Rice & A Matcha Frappe

A little heat in dinner and then a icy cold drink to cool it down.

Spicy Jasmine Peanut Rice

Ingredients for rice:

1 cup Jasmine rice

1 10 to 13-ounce can chicken, drained

1 Tbsp diced dried shallots

2 tsp sugar

Sauce ingredients:

1/3 cup chunky peanut butter

2 Tbsp rice vinegar

1 Tbsp lower sodium soy sauce

2 tsp lime juice or 2 tsp water + 1/4 tsp True Lime powder

1 tsp toasted sesame oil

1/4 tsp diced dried garlic (1 clove)

1/4 tsp red pepper flakes

Fresh or dried cilantro for garnish

Directions for rice:

Bring 2 cups water, chicken and sugar to a boil in a medium heavy saucepan. Add in the rice, stir well, lower the heat to low and cook tightly covered for 20 minutes.

Directions for sauce:

Mix the sauce ingredients up in a bowl, stirring well till they combine in a smooth paste. set aside till rice is cooked.

Toss the rice mix with the sauce till well coated.

Serves 2-3.

Matcha Green Tea Frappe

Ingredients:

5 tsp Matcha “latte” mix

8 ounces cold milk

1 1/2 cups ice

Directions:

In a blender process on high, on frappe setting till well blended – and no ice chunks. Serve in a tall glass with a bubble tea straw.
