Pasta With Tomatoes And Clams

The sauce cooks in the time it takes to boil the water and cook the pasta. A light tasting and very, very good quick pasta dinner 🙂

Pasta With Tomatoes And Clams

Ingredients:

8 ounces uncooked bow tie pasta

1 6-ounce can minced clams

1 Tbsp extra virgin olive oil

3 cloves fresh or 3/4 tsp dried minced garlic

1 14 1/2-ounce cans diced tomatoes

1 Tbsp dried or 1/4 cup fresh parsley

1 Tbsp dried diced onions

1/4 tsp fresh ground black pepper

2 tsp lemon juice or 1/2 tsp True Lemon powder

Parmesan cheese

Directions:

Bring a large pot of water to a boil. Add in the pasta and cook for time on package.

Meanwhile, in a medium heavy saucepan heat the oil and garlic over medium heat, till the garlic is just starting to smell good. Add in the cans of tomatoes, along with the liquid. Drain the can of clams into the pot, reserving the clams. Add in the parsley, onions and pepper. Bring the sauce to a boil, lower the heat and simmer on medium low heat for 15 minutes.

Drain the pasta. Add the clams and lemon juice (or powder) into the sauce. Turn the heat off for the sauce. Add the pasta into the sauce and stir well. Stir in 1/4 cup Parmesan cheese and let melt. Add another 1/4 cup till the sauce starts to thicken.

Plate up and toss on a little more cheese.

Serves 3.
