Balsamic Sausage Pasta

I had some apple sausages in the refrigerator and the thought of a quick, fresh tasting tomato pasta sounded good tonight. So I added a bit of this and that to get a tasty dinner!

Balsamic Sausage Pasta

Ingredients:

8 ounces fusili pasta

3 chicken apple sausages, roughly chopped

2 small or 1 large yellow onions, diced

1 28-ounce can crushed tomatoes

1/4 cup balsamic vinegar

1 Tbsp extra virgin olive oil

1 tsp diced dried garlic (or 4 fresh cloves)

1 tsp dried parsley (or 1 Tbsp fresh)

1/2 tsp dried thyme

1/2 tsp fresh ground black pepper

1/2 cup grated Parmesan cheese

Directions:

Bring a large pot of water to a boil. Cook pasta for time on package. Drain when ready.

Meanwhile, in a medium saucepan (deep versus wide), heat over medium. Add the oil and saute the onion till turning light gold. Add in the sausage chopped up. Heat through.

Add in the tomatoes, vinegar and seasonings. Bring to a boil, lower heat, cover tightly and simmer for at least 10 minutes till flavors meld.

Toss with hot pasta, add in cheese and toss again.

Serves 3 – 4.
