Tomato Bison And Spinach Pasta

I love this dish – it is easy to make and is super filling. It is an awesome way to get your veggies as well!

Tomato Bison And Spinach Pasta

Ingredients:

16-ounces uncooked pasta shape of choice (you want a big pasta shape like penne, rigatoni, etc)

1 lb ground bison or lean hamburger

1 6-ounce package fresh spinach (produce department)

2 14-ounce cans diced tomatoes, undrained

1 tsp Italian herb blend

1/4 tsp diced dried garlic

1 cup shredded mozzarella cheese

1/4 cup grated Parmesan cheese

Directions:

Bring a large pot of water to boil. Add the pasta and cook for time on package.

Meanwhile, in a large nonstick pan over medium high heat cook the bison till done. You may need to add a little olive oil as bison is lean.

Add in the spinach, tomatoes and seasonings. Cook for two minutes or until the spinach wilts. Turn off the heat.

Drain the pasta when done, add into the sauce and toss to coat. Mix in the cheeses and toss again.

Plate up!

Serves 4 to 6, depending on appetite and if you add bread on the side.
