Black Bean Jalapeno Dip/Spread

I made up a batch of this spread this morning. Thinking of having it mixed into rice or couscous for lunch 🙂 You can sub in fresh garlic and Jalapeno, I used the dried I had on hand. I get dried Jalapeno from Harmony House Foods. Measure out 2 Tbsp dried and soak with 2 Tbsp cool water for 15 minutes then use. The garlic can be added in with everything else.

Black Bean Jalapeno Dip/Spread

Ingredients:

1 15-ounce can organic black beans, drained and rinsed

2 Tbsp diced Jalapeno

2 Tbsp lemon juice (or 1/2 tsp True Lemon powder + 2 Tbsp cold water)

2 tsp extra virgin olive oil

1 tsp toasted sesame oil

1/4 tsp diced dried garlic

Directions:

Put everything in a food processor and and process till smooth texture.Pack into a storage container, pop in the frig and let meld for at least 30 minutes. Store in the frig and use up in a couple days.

Makes about 1 and half cups total.
