Blueberry Oatmeal Cookies

I made up a big batch of these tonight. That odd combo of bad for you and a wee bit of healthy 😉

Blueberry Oatmeal Cookies

Ingredients:

1 cup (2 sticks) unsalted butter

1 1/2 cups packed brown sugar

2 tsp pure vanilla extract

2 large eggs

2 cups quick cooking oats

1 1/2 cups all-purpose flour

1 tsp baking powder

1 tsp ground cinnamon

1/2 tsp fresh ground nutmeg

1/4 tsp kosher salt

1 cup dried wild blueberries

Directions:

Heat the oven to 350*.

In your mixer bowl whip together the butter, sugar and vanilla till light and fluffy. Ad in the eggs and beat till mixed.

Add in the dry ingredients and beat on low till mixed. Mix in the blueberries on low till combined.

Bake on ungreased cookie sheets for 10 to 13 minutes, or until bottoms are golden brown. The cookies will be soft on top, but will firm once cool.

Cool for a minute or two on the trays, then let cool on a cooling rack.

Depending on size, about 4-6 dozen. I used a small disher that is 1 Tablespoon size, making mine uniform small cookies.

The cookies freeze well.
