Pesto Sausage Rice

One of my ‘what do I have in the cupboard’ dinners 😉 It can be fun to see what I can come up with in a few minutes time!

Pesto Sausage Rice

Ingredients:

1 cup long grain rice (I used Jasmine)

1 large sweet onion, diced

3 chicken sausages, cubed small (I used sun dried tomato/provolone cheese ones)

2 cups low sodium chicken broth

3 Tbsp pesto sauce

1/4 tsp diced dried garlic or 1 diced clove

1/4 tsp fresh ground black pepper

1/2 cup fresh shredded Parmesan cheese

Directions:

Coat  a heavy large saucepan with cooking spray. Cook the onions, sausage and garlic over medium heat till golden. Add in the broth, rice, pesto and pepper. Bring to a boil, lower the heat to low, cover tightly and cook for 20 minutes. I stirred it after 5 minutes to avoid rice crusting on the bottom.

Stir and fluff up the pilaf, then mix in the cheese and let melt.

Serves 3.
