Healthy Fudgy Brownies

I have been working on lowering the fat in a lot of the items I bake and with a few subs I can usually pull it off. I had a big craving for chocolate and these brownies hit the spot. As well, it makes a small pan for less temptation!

Sarah’s Healthy Fudgy Brownies

Ingredients:
4 egg whites or 3/4 cup liquid egg white sub
1 tsp pure vanilla extract
1 1/3 cups white sugar
1/2 cup baking cocoa – organic preferred
1 1/4 cups all-purpose flour
1/2 tsp kosher salt

Directions
Preheat oven to 350°F.
Spray a 8″ square glass baking pan with cooking spray.
Whisk egg whites until slightly frothy in a large glass bowl, then add vanilla, sugar, and cocoa. Stir together with the whisk.
Add flour and salt and stir until well blended with the whisk. You will have a few lumps, which is fine. Don’t overwork the batter.
Pour the mixture into the pan and bake for 22-30 minutes or until butter knife inserted into the brownies comes out smooth. You want soft crumbly inside, but not raw batter. Check at 22 minutes and bake till done. If you prefer cake like brownies go to 30 minutes.

Makes 6 to 9 brownies.
