Balsamic Beans with Pasta

No photo tonight, sorry about that! This was an idea I had that turned out well. It is a vegetarian dish and will fill you up nicely.

Balsamic Beans with Pasta

Ingredients:

1/4 cup extra virgin olive oil

1 yellow onion, peeled and diced

1 tsp dried or fresh Rosemary

1 tsp diced dried garlic or 4 fresh cloves, diced

1/8 tsp red pepper flakes

1/4 cup red wine vinegar

1/4 cup balsamic vinegar

1 14-ounce can cannellini beans, rinsed and drained

1 14-ounce can artichoke hearts, drained and chopped

1/4 tsp fresh ground black pepper

1/2 cup pasta water

8-ounces rigatoni pasta

1/2 cup Parmesan cheese

Directions:

Bring a pot of water to a boil. Cook pasta for time on package, then drain well.

Meanwhile, in a heavy medium saucepan heat the olive oil over medium heat. Add in the onion, garlic, rosemary and red pepper flakes. Cook till onion is tender. Add in the two vinegars, black pepper, beans and artichokes, mixing well. Stir in 1/2 cup of the pasta water. Simmer over medium till bubbling.

Toss with pasta, then with the cheese. Salt to taste, as desired.

Serves 3.
