Blueberry Banana Oat Quick Bread

The second loaf of quick bread I made for yesterday was this one:

Blueberry Banana Oat Quick Bread

Ingredients:
2 3/4 cups Bisquick Heart Smart® mix
2/3 cup sugar
1/3 cup quick-cooking oats
2 medium size mashed very ripe bananas
1/4 cup non fat milk
2 eggs or 1/2 cup egg substitute
1 cup fresh or frozen blueberries (see note below)

Directions:
Heat oven to 375°F.  Spray 9×5-inch loaf pan with cooking spray.
In a large bowl, stir baking mix, sugar and  oats together. In a small bowl mix the bananas, milk and eggs. Add to the dry mix and mix with a spoon for 30 seconds or until combined. Gently fold in blueberries. Spread into prepared pan.
Bake 60 minutes or until toothpick/butter knife inserted in center comes out clean. Let cool for 30 minutes. Turn loaf pan over carefully and knock bread out. Cool on a rack right side up for at least 2 hours. Cut slices with a serrated bread knife.

Using frozen blueberries? Let them thaw overnight and then place on a couple layers of paper towels, with a layer or two on top. Let them soak off the extra juice for 30 minutes.
