Thai-style Crab Fried Rice

Thai Crab Fried Rice (Khao Phad Pu)

Ingredients:

Rice:
1 cup uncooked jasmine rice

Other items:

1 cup real crab meat, shredded
1/4 cup vegetable oil
1/4 cup lower sodium soy sauce
3 eggs, beaten in a bowl
1 medium sweet onion, finely chopped
1 Tbsp sesame oil
2 garlic cloves, finely chopped
2 tsp fresh ground black pepper
2 tsp sugar
1 tsp Thai fish sauce

Directions:

In a small sauce pan bring 2 cups water to a boil. Add in the jasmine rice, return to a boil, lower the heat to low, covering tightly. Cook for 20 minutes. Transfer the rice to a large glass bowl, spreading out. Stash in the frig for a couple hours to fully cool.

Combine sugar, pepper, soy & fish sauces, set aside.

Warm oils in a large frying pan or wok over medium heat. Lightly saute the garlic and green onion. Add in rice and mix thoroughly to separate. Heat through, tossing constantly.
Make a hole in the center, add egg, scramble a bit, then  toss with the rice till cooked and evenly mixed. Mix in crab meat, tossing to combine.

Add sauce and mix in well.

Serves 3.
