Bison Stroganoff

Maybe it is just me, but it feels like fall is slipping in quietly right now…..

Bison Stroganoff
Ingredients:
1 lb. ground bison
1 onion, chopped small
1/4 tsp dried diced garlic
2 Tbsp all-purpose flour
2 cups lower sodium beef broth
1/4 cup ketchup
2 Tbsp Worcestershire sauce
2 tsp paprika
1/2 tsp fresh ground black pepper
1 cup low fat sour cream
12 ounces small bow tie pasta or egg noodles, cooked

Directions:
Heat a large non stick skillet over medium high heat and cook ground bison and onions till done.
Add flour and garlic, stir in, cooking for a couple minutes.
Add beef broth, ketchup, Worcestershire sauce, paprika and pepper, stir and cook over medium heat till
thickened and bubbling. Lower the heat to low and add the sour cream in and heat through till warmed.
Serve over the pasta (or toss to combine).
Serves 4.
