Quick Tortellini Soup

I was feeling blah last night and wanted a bowl of comforting soup -but neither did I have the desire to spend hours cooking, it was already like 6:30 pm! So I got to looking at what I had around to make a “little of this, a little of that” soup 😉

Quick Tortellini Soup

Ingredients:

5 cups lower sodium chicken broth

1 14.5-ounce can diced tomatoes with juice

1/2 cup frozen edamame (or whatever vegetable you want!)

1 Tbsp dried onions

1 Tbsp balsamic vinegar

splash of extra virgin olive oil

1/2 tsp dried garlic

1/2 tsp fresh ground black pepper

1 1/2 cups dry mushroom filled tortellini

Directions:

Bring everything but the tortellini to a boil, add in the pasta and cook for time on package (lower to a gentle boil and cover). Mine were from Trader Joe’s and took 13 minutes. Test for needing more seasoning.

Top with fried onions and serve!

Serves 3 to 4.
