Peanut Steak Noodles

I liked the base of this recipe but next time I will be adding more red pepper flakes and maybe ginger for more of a punch. Overall it is a solid recipe though. I would say that some might like it saltier as well, probably with double the soy sauce. And yes, you really need good sirloin steak. Get a lean cut, with little marbling and cut on the bias. Chill the meat for 15 minutes in the freezer for ease in slicing thin.

Peanut Steak Noodles

Ingredients:

8-ounces spaghetti, broken in half

1 lb sirloin steak

1 cup bell pepper, chopped

1 1/2 cups frozen green peas, thawed

1/2 cup lower fat sesame ginger salad dressing

2 Tbsp natural peanut butter

2 Tbsp lower sodium soy sauce

4 green onions, trimmed and thinly sliced

1/2 cup unsalted roasted peanuts, diced

Pinch red pepper flakes

Directions:

Chill the meat for 15 minutes in the freezer for ease in slicing. Cut on the bias in thin slices and trim any fat.

In a small bowl mix the peanut butter, soy sauce and pepper flakes together, set aside.

Bring a pot of water to boil and cook the pasta for the time on package. Meanwhile heat a large non stick skillet over medium high heat. Add in the dressing and the steak. Cook quickly for 3 to 4 minutes, stirring often. Pull the meat out and place on a plate, add in the vegetables and bring to a boil. Lower the heat to medium, add the meat back in and then the sauce mix. Stir well to combine, lower to low and stir in the peanuts. Toss in the drained pasta and toss to combine.

Serves 3.
