Quick Sausage and Couscous

I had no idea what to whip up for dinner tonight so did a walk by of the cupboards and refrigerator….20 minutes later dinner was on the table! Very easy and off the top of my head it was one I would make again for the guys.

Quick Sausage and Couscous

Ingredients:

3 chicken and apple sausages, chopped into small pieces

1 medium sweet onion, peeled and diced

3 garlic cloves, minced

1 Tbsp extra virgin olive oil

1 cup whole wheat couscous

1 1/2 cups lower sodium beef broth

1/4 tsp red pepper flakes

1/2 tsp freshly ground black pepper

1 cup grated Parmesan cheese

Directions:

In a large saucepan heat the oil over medium high heat, add in the onion and sausage, cooking till the onions are translucent. Right before done, add in the garlic to quickly cook it. Add the broth and red pepper flakes, bring to a boil. Turn off the stove, add in the couscous stirring well. Cover tightly and let sit off the heat for 7 minutes. Sprinkle the cheese and pepper on top and mix in till well blended. Add salt to taste as desired.

Serves 3.
