Beef Stew For Three

We had this for dinner a couple of nights ago, no photos though.

It was an easy stew and went together fast. The meat was tender as well.

Beef Stew For Three

Ingredients:

1 lb cubed beef stew meat

1 Tbsp vegetable oil

1 large sweet onion, peeled, cut in half rings

2 cups low sodium beef broth

1 14.5-ounce can diced tomatoes

1 Tbsp Worcestershire sauce

1/2 tsp dried diced garlic

2 small bay leaves

1 tsp grnaulated sugar

1/2 tsp freshly ground black pepper

1/2 tsp paprika

1/8 tsp ground allspice

20 baby carrots (larger ones)

1 15-ounce can whole potatoes, drained

1 15.5-ounce can green beans, drained

1/4 cup low sodium beef broth

1 Tbsp cornstarch

Directions:

In a large/deep non-stick skillet heat the oil over medium high heat and add the beef, browning on all sides. At the end, add in the onions for a quick stir. Add in the 2 cups beef broth, tomatoes, garlic, bay leaves, sugar, pepper, paprika and allspice. Cover, lower the heat to medium low and let simmer for an hour. Add in the baby carrots and gently simmer for another 30 minutes. Stir in the whole potatoes and green beans, let simmer for another 30 minutes.

Whisk the remaining 1/4 cup beef broth with the cornstarch till smooth, stir into the hot stew quickly. Turn off the heat and add salt to taste.

Serves 3.
