Banana Wafer Pudding

We had this for dessert the other night. Retro style desserts are indeed awesome. We will get a photo next time, we had friends over for dinner so didn’t have time.

Banana Wafer Pudding

Ingredients:

2/3 cup granulated sugar

1/3 cup all-purpose flour

1/4 tsp kosher salt

3 large eggs, beaten

2 cups low-fat dairy milk

1/2 tsp pure vanilla extract

2 Tbsp unsalted butter

2 to 3 bananas (3 small or 2 large)

6 ounces vanilla wafer cookies (half a package)

Directions:

In a heavy medium saucepan over medium low heat combine the sugar, flour and salt with a whisk, stir in the eggs till combined, then whisk in the milk. Let cook over the heat, stirring often at first and then constantly once it starts to thicken. You want a thickness where it holds onto a spoon. Take off the heat, whisk in the butter to melt, then the vanilla.

In a 1 1/2 quart bowl or 8×8″ baking dish line the bottom with 1/3 of the cookies, then a layer of 1/2 of the sliced bananas. top with 1/2 of the pudding. Repeat the layer, and then decorate with the last 1/3 of cookies. Let chill for an hour or so uncovered, then cover with plastic wrap. For best taste let chill for at least 4 hours, the cookies soak up the pudding.

Whip Cream For Topping

Ingredients:

16 ounces whipping cream

4 to 5 Tbsp powdered sugar

1 tsp pure vanilla extract

Directions:

Chill a large glass bowl and mixer beaters in your freezer for at least 15 minutes. Add the whip cream and start beating till it just starts to have soft peaks (where the cream falls over off the beaters). Sprinkle in the sugar to taste and continue to beat, adding in the vanilla as well, till you have the texture you like.

Serves 4.
