Nectarine Cobbler

I loved this easy recipe so much I made it twice this week! The original recipe called only 2 cups fruit but I found it is better with 3 cups, though it needed a longer bake time. It would be more fluffed up crust if you used less fruit. Secondtime around I added in cinnamon for a bit more flavor, both ways are excellent.

Nectarine Cobbler

Ingredients:

4 Tbsp unsalted butter

3/4 cup all-purpose flour

3/4 cup granulated sugar

1 tsp baking powder

1 tsp ground cinnamon

1/4 tsp kosher salt

3/4 cup low-fat milk

3 cups nectarines, chopped small, peel left on

1 Tbsp granulated sugar

Directions:

Heat your oven to 350°. Place the butter in an 8×8″ baking dish and pop in the oven, let melt. Meanwhile whisk the flour through salt in a bowl, add in the milk and whisk till a smooth batter. Pull the pan out of the oven, pour in the batter and spread the fruit on top. Sprinkle the Tablespoon of sugar on top. Bake for 60 to 75 minutes or until the top is browned.
