Pasta with Artichokes and Capers

I saw the basis for this recipe on Aidells Sausage’s website and then tweaked it to my personal taste. The sausage makes it a very filling meal, you could easily leave it out though! I get Aidells at Costco in the  super packs, they are great in many dishes.

Pasta with Artichokes and Capers

Ingredients:

1 lb Barilla Spaghetti Rigati, broken in half

1 Tbsp extra virgin olive oil

4 links Aidells Artichoke & Garlic Sausage. chopped

2 cups marinated artichoke hearts, drained and chopped

1 1/2 cups lower sodium chicken broth

1/4 tsp diced dried garlic

1/2 tsp freshly ground black pepper

2 Tbsp capers, drained

1 Tbsp cold unsalted butter

1/2 cup grated Parmesan cheese

Directions:

Bring a large pot of water to a boil, cook the pasta for time on package (the Rigati is 6 minutes), drain.

Meanwhile in a large non-stick skillet heat the oil over medium-high heat, add in the sausage and cook till browned. Add in the artichokes and cook for a couple of minutes. Stir in the broth, garlic and pepper. Bring to a boil, lower the heat to low and let simmer till the sauce is reduced a bit. Add in the capers, take off the heat, stir in the butter and toss with the cooked pasta. Toss the cheese in, coating the pasta evenly.
