Apple Cranberry Oatmeal

No photos this morning, I woke up and wanted breakfast right away! This was a version of an oatmeal I did the last week. I think I prefer it this way with the apples slightly cooked, it has a ‘baked apple’ flavor.

Apple Cranberry Oatmeal

Ingredients:

2 cups light vanilla soy milk

1 apple, cored and chopped (peel is OK, used a Honey Crisp – about 1 cup)

3 Tbsp brown sugar, packed

2 Tbsp dried cranberries

1 tsp cinnamon

1 cup old-fashioned oats

Directions:

In a large saucepan combine the milk, cinnamon, sugar, maple syrup and raisins, bring to a boil and add in the oats. Turn to medium low and cook for 5 minutes, stirring often. Take off the heat and stir in the apple.

Serves 2, each serving is 1 1/2 cups.
