Banana and Pear Oatmeal

This morning I took an unripe pear and turned it into a wonderful warm bowl of fall. There is something about oatmeal that just seems right in November.

Banana and Pear Oatmeal

Ingredients:

  • 2 cups light vanilla soy milk
  • 1 cup old-fashioned oats
  • 1 cup pear, peeled, cored and large dice
  • 1/4 cup brown sugar, packed
  • 1 tsp ground cinnamon
  • 1 banana, diced into small pieces

Directions:

Add everything but the banana to a medium heavy saucepan. Bring to a boil, turn down to medium-low heat and cook for 5 minutes, stirring often. Let cool a bit, serve into bowls and top with the banana.

Serves 2.
