Cranberry Pear Maple Oatmeal

Hoping, hoping and hoping – we might get snow in the next couple days. I love snow for about the first day and then hate it, but how I get excited! I am totally into warm breakfasts at this point, fall is nearly history and winter is rolling down from the slopes of Rainier quickly šŸ™‚

Cranberry Pear Maple Oatmeal

Ingredients:

  • 2 cups light vanilla soy milk
  • 1 cup old-fashioned rolled oats
  • 1 pear, peeled and diced (about 3/4 cup)
  • 1/4 cup pure maple syrup
  • 2 Tbsp dried cranberries
  • 1 tsp ground cinnamon
  • Candied pecans to top with

Directions:

Add everything but the pecans to a deep/heavy saucepan. Bring to a boil, turn down to medium-low and cook for 5 minutes, stirring often. Dish up and top with pecans as desired.

Serves 2.
