A Pot of Warming Potsticker Soup

The baby has battling a cold all week and Kirk has it with me trying hard to not get sick. Yuck. I really cannot wait for spring to come, so I can open the windows and air out the winter sickness! A big pot of warm soup, rich in broth sounded so good for lunch. Just what we needed to hydrate with!

I buy the big bag of frozen vegetarian/vegan friendly potstickers and used 3 servings worth. Substitute whatever you have on hand!

Potsticker Soup

Ingredients:

  • 6 cups lower sodium vegetable broth
  • 2 cups water
  • ½ cup carrots, peeled and diced
  • ¼ cup dried onions (find in spice aisle)
  • 2 Tbsp lower sodium soy sauce
  • 1 Tbsp sesame oil
  • 1 tsp granulated garlic
  • ¼ tsp ground ginger
  • ¼ tsp red pepper flakes
  • 1 cup frozen peas (unsalted preferably)
  • 18 frozen vegetable potstickers

Directions:

Heat the broth through red pepper flakes over medium heat for 10 minutes, then turn to high and bring to a boil. Add in the peas and return to a boil. Add in the pot stickers, return to a boil and cook as directed on package (mine were to cook on medium-high for 3 minutes).

Serve up and enjoy!

Serves 3 (with broth left over most likely).
