Peanut Flour and a low-fat peanut sauce

Awhile back (er…a few too many months ago) I did an impulse buy at Trader Joe’s when I saw bags of peanut flour. Why I have no idea but I always have oddball items in my shopping cart. I figured I would find something to do with it and then promptly forgot about it. In early February I was reading Foodpress and came across a blog that had made an Asian style peanut sauce…with yep, the Trader Joe peanut flour! I printed out her recipe to save for later and again forgot about it (hah). The other afternoon I was going through my file-o-printed-recipes-that-sometime-I-will-really-make-I-swear and out it dropped. Upon digging through the top shelf in my pantry there I found said bag o’ flour. And got cooking!

PS: As for finding peanut flour it is also known as peanut powder and is sold where you can make ultra low-fat peanut butter by adding 2 parts dry peanut powder/flour and 1 part water till smooth. I had that a long time ago and while not super fantastic it isn’t bad either. They usually add a bit of sugar and salt to it though, where as the Trader Joe’s was just peanuts. Asian Inspired Low-Fat Peanut Sauce

Ingredients:

  • ¼ cup peanut flour
  • 2 Tbsp warm water
  • 3 Tbsp lower sodium soy sauce
  • 1 Tbsp rice vinegar (unseasoned)
  • 1 Tbsp sweet chili sauce
  • 1 tsp sugar of choice (or agave nectar)
  • ½ tsp dried ginger
  • ¼ tsp granulated garlic

Directions:

Whisk all the ingredients together until smooth.

Use as a dipping or drizzling sauce or use it to sauce a stir fry. It covers 2 lbs of veggies stir fried, once cooked toss with the sauce and serve over baked brown rice.
