Yum Yum Cake

This recipe is a hand down from my husband’s family. It shows up  most years at Christmas time. Oddly enough it is vegan friendly, so I do wonder if it isn’t a Great Depression or WWII era recipe. On the shortening, I make it with non-hydrogenated, such as Earth Balance or Spectrum, both which can be found in natural food stores and higher end grocery stores.

Aunt Hulda’s Yum Yum Cake
Ingredients:

  • 2 cup raisins
  • 2 cup granulated sugar
  • 2 cup water
  • 2 Tbsp shortening

Boil above together for 5 minutes, then cool till lukewarm.

Sift together:

  • 3 cups all-purpose flour
  • 3 tsp ground cinnamon
  • 1 tsp baking soda
  • 1 tsp kosher salt

Mix with lukewarm mixture, then add in 1 cup of chopped or diced walnuts.

Divide dough between 2 greased (use cooking spray) standard loaf pans. Bake at 350° for 45 minutes.
