Spiced City Cake

If you watch the Cooking Channel you may have caught episodes of Spice Goddess that stars Bal Arneson. Awhile back the episode “Kids Menu” aired and in it was the recipe for Spiced City Cake, which is not only easy to prepare it is also vegan! Delicious! And I have to agree with the review on the website, if I make it again I will double the spices, the smell is fantastic when it is baking.

The recipe calls for a cake pan that is 6″x3″ (Example? Wilton 6 by 3-Inch Round Pan ) of which I don’t own (shocking….kitchen gear I don’t have!) so I used a standard cake pan instead. Because of that I changed the baking time. Start checking at 30 minutes. Mine was in for 38 minutes but could have come out at 35. You can use any shape in the 7-9″ range, just start checking early!

Spiced City Cake

Ingredients:

  • 1½ cups all-purpose flour
  • ¾ cup granulated sugar (used organic)
  • 2 Tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • ½ tsp kosher salt
  • ½ tsp ground fennel seed
  • ½ tsp ground cardamom
  • 1 cup warm water
  • ¼ cup canola or vegetable oil
  • 1 Tbsp white vinegar

Directions:

Preheat the oven to 350° and spray a cake pan with baking spray (see above about pan size).

In a large mixing bowl whisk the dry ingredients together.

In a small mixing bowl whisk the wet together.

Pour the wet over the dry and whisk till combined. Pour into the prepared pan.

Bake for 30 minutes and check with a toothpick for coming out clean. For a normal cake pan expect it to take 30 to 40 minutes but watch so you don’t over bake!

Let cool a bit and then flip over to release. Let cool on a wire rack.

Cover leftovers tightly.
