Oven Roasted Radishes

I hit a great sale on radishes this past weekend so I thought I would try an idea I had seen – I don’t remember what cooking show it was but the ‘talent’ mentioned roasting them to achieve a sweet flavor. So I winged it and I was happy with the results. The outside is crispy with an almost essence of lightly roasted marshmallows (I kid not) and the inside is creamy, smooth and sweet. Oh yeah!

Oven Roasted Radishes

Ingredients:

  • Radishes (as many as you like)
  • Extra Virgin Olive Oil
  • Kosher Salt

Directions:

Preheat the oven to 350°. Trim both ends of the radishes and scrub/wash well. Dry off in some paper towels and place on a baking sheet. Drizzle enough olive oil to coat and sprinkle on a pinch of salt.

With the rack up high in the oven, roast till they smell good. I did mine for about an hour, although I could have pulled them at 45 minutes. Shake every 15 minutes while roasting.

Let sit for a few minutes and then serve.
