Watermelon Granita

Reading the newest issue of Whole Living Magazine, I saw a recipe idea for Watermelon Granita on page 58 (Thanks to my Mother In-Law who buys me this magazine as a gift every year!). I had picked up a couple of the personal size watermelons at Costco earlier this week so it was perfect timing. Whenever I see the small PureHeart melons I have to get them! They are thin-walled and are super juicy/flavorful. I used one entire melon, it was about 8+ cups, give or take, once I cut it off the rind. As long as you have 7 cups you will be good to go.

Watermelon Granita

Ingredients:

  • 1 personal size seedless watermelon (7 to 8 cups chopped)
  • ½ cup organic granulated sugar
  • 1 lemon, squeezed (about 3 Tbsp)

Directions:

Add everything to a food processor bowl, purée until smooth.

Pour into an 8×8″ glass baking dish, place into the freezer and let freeze for at least 4 hours.

To serve scrap the granita with a dinner fork and then spoon into dessert dishes. If you don’t care about it being “pretty” looking use a spoon to make the scraping faster.

Cover tightly and store leftovers in the freezer.
