Raw Chocolate Pudding

I have probably crossed over to full on weirdo-ville with this pudding. It works though and it is delicious – and more so, the baby loved it. He ate his bowl right up and howled when it was gone. And the Teen didn’t catch on with what was in it so that was an extra bonus. I found the recipe for it on Choosing Raw’s website. You won’t taste the avocado at all (although I love the taste and so does the baby) and yes, I know it isn’t “low in fat” – it is though some of the best fat you can consume. Avocados are good for you!

Raw Chocolate Pudding

Ingredients:

  • 1 Hass avocado, ripe and pitted
  • 6 to 8 Medjool dates, pitted
  • ¼ cup unsweetened cocoa powder
  • ½ tsp pure vanilla extract
  • ¼-½ water

Directions:

Add the avocado, dates, cocoa powder and vanilla to a food processor bowl. Pulse until mixed and the dates broken up. With the processor running add half the water slowly, stopping to scrape down as needed. I used ¼ cup water for a very thick pudding, use the full amount for a more pudding like texture.

Dish into 4 small bowls. It will not look like it makes a lot, it is very rich though! Keep refrigerated and eat within a couple hours.
