Apple Oatmeal

I am in love with Hulled Hemp Seeds, they are lightly nutty tasting with an essence of sesame seeds. Another great brand is Bob’s Red Mill but they can be harder to find (Whole Foods carries both brands, but in separate locations in the store). They blend into oatmeal and give it a light crunch (the hulled seeds are not hard, they are buttery soft with a tiny crunch). If you haven’t tried them, try a bag – you will like them!

Apple Oatmeal

Ingredients:

  • 2 cups original almond milk
  • 1 cup old-fashioned oats
  • 2 apples, peeled, cored and shredded
  • 4 ounce tub unsweetened applesauce
  • 2 Tbsp brown sugar, packed
  • 1 tsp ground cinnamon
  • 1 Tbsp hulled hemp seeds
  • 1 Tbsp finely ground chia seeds

Directions:

Add the milk, oatmeal, apples, applesauce, brown sugar and cinnamon to a medium saucepan, bring to a boil. Cook over medium-low heat for 5 minutes stirring often. Take off the heat and stir in most of the hemp seeds and the chia, stirring in well.

Serve topped with a bit more brown sugar (if desired) and the remaining hemp seeds.

Serves 2.
