My Mother’s Kitchen: Apple-Cheese Crisp

Taken from a yellowed index card, this recipe was typed on a cursive typewriter so I can guess it was from my Grandmother to my Mother (she loved that typewriter!). This was dessert we had a lot of growing up, especially when the apple trees were full and there for the taking!

Apple-Cheese Crisp

Ingredients:

  • 6 cups cored, pared, sliced apples
  • 1 tsp cinnamon or cake spice
  • 1 Tbsp lemon juice
  • ½ cup corn syrup
  • ½ cup granulated sugar
  • 2/3 cup sifted all-purpose flour
  • ¼ tsp salt
  • 1/3 cup butter or margarine
  • ¼ lb cheddar cheese, grated (1 cup)

Directions:

Arrange apples in greased, shallow baking dish about 10″x6″x2″. Sprinkle with cinnamon. Pour lemon juice and corn syrup over apples. Combine sugar, flour and salt; cut in butter until mixture is consistency of course corn meal. Lightly stir in cheese. Top apples with this mixture. Bake, uncovered, in moderate oven of 350° for 1 hour, or until apples are very tender. Serve warm, with or without cream.

Serves 6 or 7.
