Sparkling Sugar Cookies

I got inspired to bake up cookies the other night for my OB’s office as Holiday Treats and this was the first run. Incredibly easy to mix up and they even easier to bake. No rolling, no chilling. Just mix and bake and enjoy!

Sparkly Sugar Cookies

Ingredients:

  • 2¾ cups all-purpose flour
  • ¼ tsp baking soda
  • ¼ tsp salt
  • 1 cup butter (2 sticks), softened
  • ¾ cup granulated sugar
  • ¼ cup liquid Egg Beaters© or 1 large egg
  • 1 tsp pure vanilla extract
  • Clear Sparkling Sugar to roll in (coarse sugar also works)

Directions:

Preheat the oven to 350° and line two baking sheets with parchment paper.

Whisk the flour, baking soda and salt together in a small mixing bowl, set aside.

In a stand mixer bowl add the butter and beat until smooth, add in the sugar and beat until creamy.

Add in the egg and vanilla, beat until smooth. With the mixer on low, add in the flour and beat until mixed in (turning up as needed).

Take off the mixer and make 1 Tablespoon size balls (I use a Norpro Stainless Steel Scoop, 1 Tablespoon, 35mm). Flatten the balls gently between your palms and roll in the sparkling sugar.

Bake for 13 to 15 minutes, until set on the top and just starting to brown on the bottom.

Take out, let sit for a couple of minutes and then transfer to cooling racks.

Makes about 32 cookies.
