Raw Peanut Butter Cookie Dough Cookies

Due to my addiction of Pinterest, I came across a pin for these cookies from Chocolate Covered Katie’s blog. It sounded fun so I adapted the recipe a tiny bit and made up a batch for dessert after dinner. They pulled together in less than 10 minutes and we happily snacked on them (including the wee one, who really liked it!). They are a bit oily as a warning (due to the natural peanut butter) but very delicious, if allowed to sit a bit they dry out nicely.

Raw Peanut Butter Cookie Dough Cookies

Ingredients:

  • ½ cup raisins
  • ¼ cup natural style peanut butter (used chunky Adam’s)
  • 2 Tbsp dry roasted peanuts (unsalted)
  • 1/8 tsp pure vanilla extract

Directions:

Add everything to a food processor or mini food chopper, process until relatively smooth and in a ball.

Lay out a sheet of parchment paper and make 8 1 Tablespoon balls ( I used a 1 Tablespoon Disher). Roll the balls gently with your hands, flatten with a fork, making criss-cross patterns on the top. Let sit for 30 minutes to an hour and the cookies dry out a bit (less oily) and then enjoy!

Makes 8 cookies.
