Chickpea Sammies

I got this sandwich idea when I was looking at vegan sandwich filling recipes….call me crazy but I don’t get the concept of adding Kelp powder to chickpeas to make fake tuna (y-u-c-k). Kelp is just nasty is all I have to say.  And why wreck perfectly good chickpeas trying to fake fish? Let the chickpeas shine through – they make a tasty filling, especially combined with crunchy apples, pecans and celery!

Chickpea Sammies

Ingredients:

  • 15 ounce can chickpeas (garbanzo beans), rinsed and drained
  • 1 small crisp apple, peeled, cored and diced
  • ¼ cup celery, diced
  • ¼ cup pecans, diced
  • ¼ cup light mayonnaise
  • 2 Tbsp sweet pickle relish
  • 2 Tbsp fresh lemon juice
  • 2 Tbsp red onion, diced
  • ½ tsp dried dill weed
  • bread or rolls

Directions:

Pulse the chickpeas in a food chopper until roughly chopped, transfer to a mixing bowl, Add the remaining ingredients and stir well. Spread on bread or rolls.

Makes 2 to 3 sammies, depending on how thick you like your filling (3 average, 2 super thick).

  1. Oh my lord – I agree! I hate using nice ingredients to fake vegetarian/vegan food. If you choose to be one then do it properly. Eat food for the value it has alone – don’t try to turn it into something it isn’t.
