Vanilla Pudding

I made this simple pudding for Walker to enjoy for dessert the other night. He was happy and it was a way to get some protein into him. And it only took me a couple of minutes to make it – an easy treat while the baby slept.

Vanilla Pudding

Ingredients:

  • 2 2/3 cups milk, divided
  • 1/3 cup granulated sugar
  • 3 Tbsp cornstarch
  • ¼ tsp fine sea salt
  • 2 large eggs
  • 2 tsp pure vanilla extract

Directions:

In a large heavy saucepan bring 2 cups of milk to a boil over medium heat.

Meanwhile in a small mixing bowl whisk the sugar, cornstarch and salt with the remaining 2/3 cup milk until smooth, add in the eggs, whisking in.

As the milk comes to a boil, reduce to medium-low, whisk the egg mixture again and add in whisking constantly. Let cook, whisking constantly, until the pudding thickens (it will thicken more upon chilling). Stir in the vanilla.

Transfer to dessert bowls and refrigerate for a couple of hours.

Makes 5 to 6 bowls.
