Apple Nachos

Calling them “nachos” caused Kirk to roll his eyes but he didn’t turn it down for snack either. A delicious way to get more fruit. Walker enjoyed it, although the teenager looked down his nose (he still is weird about fruit unless I hide it in a recipe…sigh). The recipe is open-ended really, add or subtract what you want and make for as few or many as you want. One apple per adult and maybe ½ for a child.

Apple Nachos

Ingredients:

  • 3 apples, peeled (used Fuji)
  • 1 small lemon, juiced
  • ¼ cup peanut or favorite nut/seed butter, warmed up
  • ¼ to ½ cup slivered nuts, raw or toasted
  • ¼ cup flaked or shredded coconut
  • ¼ cup semi-sweet chocolate chips

Directions:

Cure and thinly slice the apples. Add the lemon juice to a bowl of water, add the apple slices as you cut them, let soak for a minute, then drain and pat dry.

Arrange the apples on serving plates, drizzle the warm nut butter over the top and then sprinkle on the remaining ingredients. Serve immediately!

Serves 3 adults or 2 adults and a kid or two.
