Birthday Banana Bread

My brother’s birthday is coming up and I wanted to send him something homemade. While it is usually 1 day for shipping, I wanted to pick an item that could handle an extra shipping day if need be. Vegan banana bread was a good choice! Thankfully the Post Office did get it delivered the next day, so he got to enjoy it 18 hours after it came out of the oven….

Banana Bread

Ingredients:

  • 1¾ white whole wheat flour
  • 1 cup brown sugar, packed
  • 3 Tbsp granulated sugar
  • 1 tsp baking soda
  • ½ tsp baking powder
  • ½ tsp kosher salt
  • ½ tsp ground cinnamon
  • ½ tsp ground nutmeg
  • 3 ripe bananas, mashed
  • ½ cup vegetable oil (canola or sunflower work well)
  • 2½ Tbsp pure maple syrup
  • 2½ Tbsp water
  • ½ tsp pure vanilla extract

Directions:

Preheat oven to 350°, spray a 8″ x 4″ loaf pan with cooking spray.

Whisk the flour through nutmeg together in a large mixing bowl.

In a small mixing bowl whisk the bananas through vanilla until smooth, add to the dry and stir until mixed.

Pour the batter into the prepared pan, bake for 1 hour to 1 hour, 20 minutes, until golden on top and a toothpick comes out clean in the center. Let cool before slicing, store wrapped.

Makes 1 loaf.
