Chocolate Whole Nut Bars

I have played with recipes for whole nut bars, without dates or corn syrup to hold the bars together. If you love whole nuts you will love these bars. The almonds are crunchy, the chocolate is mixed into creamy honey. Who am I kidding….the honey and chocolate mix would be just great on its own!

Chocolate Whole Nut Bars

Ingredients:

  • ½ cup raw pecans
  • 1/3 cup raw almonds
  • 2 Tbsp honey
  • 2 Tbsp unsalted natural almond butter
  • 2 Tbsp dark or semi-sweet chocolate chips
  • Pinch of fine sea salt

Directions:

Line a bread pan with plastic wrap.

Stir the honey and almond butter together in a small microwave safe bowl, heat for 30 to 40 seconds, stirring every 15, until melted and smooth, add the salt. Pour over the nuts and chocolate chips in a mixing bowl, stir with a silicone spatula, quickly pack into the prepared loaf pan. Press down to pack in, fold the excess plastic wrap over and refrigerate for an hour. Cut into slices and wrap, keep refrigerated until eating time.

The bars stay soft/flexible even when cold, they will melt in hotter temperatures so are not a good choice for hot summer hikes or cars.

I cut mine into 5 bars.
