Oat and Chocolate No Bake Treats

Many months ago I had written this post up and it was a forgotten post that wasn’t published – the picture of the original recipe is pretty awful since it was taken inside, most likely that is why it languished in draft-prison ;-). So I decided to revisit the recipe and update them to how we eat now. Take out the butter, swap the sugar and doing a quick grind of the oats. And maybe get a better looking photo – hah, not likely….they simply are not a pretty cookie and don’t shoot well.

A quick snack to make after dinner. Sweet enough to satisfy, full of healthy oats to at least take some of the guilt away. The kids liked them, so that is always success.

The new version –

Chocolate and Oat No Bake Treats

Ingredients:

  • ¼ cup honey, preferably raw
  • ¼ cup unsweetened cocoa powder
  • ¼ cup unsweetened almond or coconut milk
  • 1 Tbsp extra virgin coconut oil
  • 6 Tbsp nut or seed butter of choice, preferably raw
  • ½ tsp pure vanilla extract
  • 1¼ cups old-fashioned oats

Directions:

Whirl the oats in a mini food chopper or blender to break up into smaller pieces – I found this made a tastier cookie over using whole oats, they were moister as well.

Stir the first four ingredients together in a small saucepan, bringing to a boil. Turn down to medium-low and cook for two minutes, stirring constantly.

Take off the heat, add in the nut or seed butter and vanilla, stirring in well. Add the oats and stir until mixed (it will be stiff).

Form 1 Tablespoon balls (A Disher works well) and place on a parchment paper lined baking sheet. Flatten gently on top to make “cookies”. Refrigerate to firm up, store tightly covered in the refrigerator.

Makes about 17.

The original version –

Oat and Chocolate No Bake Treats

Ingredients:

  • 1/3 cup granulated sugar
  • ¼ cup cocoa powder
  • 1 Tbsp unsalted butter
  • ¼ cup milk
  • 1¼ cups old-fashioned oats
  • ¼ cup + 2 Tbsp peanut butter (all natural preferred)
  • ½ tsp pure vanilla extract

Directions:

Stir the first four ingredients together in a small saucepan, bringing to a boil. Turn down to medium-low and cook for two minutes, stirring constantly.

Take off the heat, add in the peanut butter and vanilla, stirring in well. Add the oats and stir until mixed (it will be stiff).

Form 1 Tablespoon balls and pack gently with your hands to firm up. (A Disher works well)

Makes about 12.

  1. I make something similar and keep them in the freezer. I could not get mine to photograph well either. Your pic looks much better than mine.
