Chocolate Chip Fro-Yo

The baby has had a head cold the past few days and due to his coughing/sneezing in our faces I was feeling scratchy the other day. All I wanted was something cold, preferably frozen and sweet. I didn’t feel like driving to the store for ice cream, because I didn’t feel up to it and lord knows I didn’t need to be tempted by “frozen dessert” faking as ice cream (you know where the ‘ice cream’ has 40+ ingredients and even the organic ice cream is highly questionable). Nor did I need the saturated fat of premium ice cream (it’s either full fat or thickeners, whatta choice!) So I poked around to see what we had on hand and in the back of the fridge I had a 32-ounce container of plain goat yogurt from Redwood Hill Farm. I sent Ford out to the chest freezer for the ice cream maker core and we got frozen yogurt going. By the time dinner was done we had soft serve ready. Oh yeah! I have to say that until we went the unprocessed path, I rarely used our ice cream maker. Now? well, if I keep the core in the chest freezer I am only 30 to 45 minutes from a bowl of ice cream. Consider that it takes 30 minutes at least to drive to town, shop and get back home. Connivence food isn’t always so connivent…..

Btw? I am working on a vegan/plant-based diet friendly pumpkin ice cream today. If it turns out I will be writing it up soon!

Chocolate Chip Frozen Yogurt

Ingredients:

  • 32-ounces plain yogurt (preferably all-natural, full fat)
  • ¾ cup granulated sugar, preferably organic
  • ½ cup semi-sweet or dark chocolate chips, finely chopped
  • 1 tsp pure vanilla extract

Directions:

Whisk the ingredients together until smooth. Pour into the frozen core of an ice cream maker, process as directed or for our machine (a Cuisinart Pure Indulgence Frozen Yogurt, Sorbet, and Ice Cream Maker), 25 minutes. Serve ‘soft-serve’ immediately or pack into an airtight container, freeze until firm. It will get very hard once stored over night, but will soften if left to sit for 5 or 10 minutes before scooping.

After lunch today, Walker and I went out back and picked up a bunch of the giant maple leaves and built our “fall display”. This is about as ‘Martha’ as I get. Our front porch is rather drab and doesn’t get direct sunlight, the yellow and orange hues light it up.
