Raw Cookie Dough Slices

Sometimes Mama wants a treat for herself, and wether or not the kids can or want to eat it, hah, not my problem 😉 I really love raw cookie dough. The eating kind, not the baking kind.

Raw Cookie Dough Slices

Ingredients:

  • ½ cup brown sugar
  • ¼ cup coconut oil, solid
  • ¼ cup unsweetened coconut milk
  • 1 tsp pure vanilla extract
  • Pinch fine sea salt
  • 1 cup all-purpose flour
  • ¼ cup dark or semi-sweet chocolate chips

Directions:

Add brown sugar and coconut oil to a stand mixer bowl, beat on low until smooth. Add in coconut milk, vanilla and salt, beat until smooth.

Add in flour, beat in on low, then on medium till a smooth dough forms. Add in chocolate chips.

Spread a piece of plastic wrap out, knock dough onto. Form into a log shape, roll up in plastic. Refrigerate for a few hours to set up. Slice off as desired, store remaining dough tightly wrapped.

Want to use it in ice cream?

After chilling, cut into slices, then the slices into quarters. Freeze until needed, stir into homemade (vegan or regular) ice cream before freezing, or add into softened store bought ice cream.
