Strawberry & Blueberry Frozen Cream

Have a craving for an intense taste of summer? If you are like Walker and Alistaire, you cannot get enough strawberries! Not only is this fast to make, it is 5 simple ingredients! And no ice cream maker either 😉

Strawberry & Blueberry Frozen Cream

Ingredients:

  • 1 pound strawberries
  • 8 ounces blueberries
  • 1 14-ounce can or jar sweetened condensed milk
  • ½ tsp pure vanilla extract
  • Pinch fine sea salt

Directions:

Wash strawberries, shake off gently. Remove caps, cut into quarters. Place on a rimmed baking sheet with the blueberries (pick over for stems), freeze berries until firm, 2-3 hours.

Add frozen berries and remaining ingredients into a food processor bowl. Pulse until the berries are finely chopped, scrape sides and then process for 3 minutes.

Scrape into a glass storage container, smooth out. Place in freezer to finish setting up.

Before serving, allow to rest on counter for 5 to 10 minutes.

PS: And we got the first blueberry of the year!

  1. This looks so good! I can only image how much better it taste’s with fresh berries. I wish we could grow berries here. My kids go through a ton of them. Have you tried a non-dairy version. I wondered if coconut milk (the thick canned kind) would work in place of dairy.

    1. The frozen berries make it into “ice cream” – just like using frozen bananas 🙂 I freeze fresh berries on trays and use them. I think I might try canned coconut cream and see what happens – add in honey or maple syrup.
