Avocado Lime Popsicles

Creamy, smooth and the taste is all sweet lime. The boys loved these, I neglected to tell them it was avocado 😉

Avocado Lime Popsicles

Ingredients:

  • 2 medium avocados, ripened
  • 2 small limes
  • 1/3 cup sweetened condensed milk
  • Pinch fine sea salt
  • 2/3 cup water
  • 3 Tbsp granulated sugar

Directions:

Juice limes, measure 3 tablespoons, add to blender or food processor. Scoop out avocado flesh, chop up, and measure out 1 cup, add to blender. Pour milk and salt over.

Stir sugar into water, until sugar is dissolved. Add to blender.

Process on medium speed until smooth.

Divided evenly between popsicle molds. (I used a similar one to this: Norpro Ice Pop Maker) Put lid on tightly, add in sticks (or follow your mold’s instructions), freeze for at least 4 hours. To remove, dip molds into warm water, squeeze out with hands. (I pop mine back into the freezer after this to set back up). Store tightly sealed.

Makes 6 standard size popsicles.
