Mini Vanilla Bean Scones

Walker really, really loves Starbuck’s mini scones. But at $1.50 each, that is robbery, considering he’d happily eat 2 to 3 of them. When I made these dainty scones, he was so happy and crowed to Daddy I had made him “baby scones”. That is what makes baking so worth it 😉

Mini Vanilla Bean Scones

Ingredients:

  • 1 cup all-purpose flour
  • 1½ Tbsp granulated sugar
  • 1 tsp ground vanilla bean
  • 1½ tsp baking powder
  • Pinch of fine sea salt
  • 3 Tbsp cold unsalted butter, diced
  • ¼ cup half and half
  • 1½ tsp pure vanilla extract
  • 1½ tsp Ener-G Egg Replacer (or 1 large egg white)
  • 2 Tbsp warm water

Glaze:

  • 1½ Tbsp half and half
  • ½ cup powdered sugar
  • 1 tsp pure vanilla extract

Directions:

Preheat oven to 350°, line a baking sheet with parchment paper.

Whisk flour, sugar, vanilla bean, baking powder, and salt together in a medium mixing bowl.

Work butter in quickly into small crumbs.

Mix Ener-G and water together, add vanilla and half and half, then pour over flour, mix quickly in.

Scrape dough out onto parchment paper, pat into a circle, about 6 to 7″ across. Cur into 8 wedges, slightly separating the scones on the paper.

Bake for about 9 to 10 minutes. Let cool.

Meanwhile, mix glaze up. Once scones are cooled, pour over, let set up.

Makes 8 scones.
