Whole Fruit Fruit Snacks

If you have bags of frozen fruit lying around, with no plans…this is a fun way to make fruit snacks for the kids. Unlike those made with juice, these are opaque, and have a real chewy texture.

Whole Fruit Fruit Snacks

Ingredients:

  • 16-ounce bag frozen pitted cherries
  • 16-ounce bag frozen strawberries
  • Orange juice
  • ½ cup gelatin
  • ½ cup raw honey
  • 1 tsp pure vanilla extract

Directions:

Let cherries and strawberries partially thaw. Add them, and a splash of orange juice, to a high-speed blender. Process until smooth.

Pour through a fine mesh strainer, pressing gently, to extract as much juice as possible. Measure, and add enough orange juice if needed, to make 3 cups.

Pour the juice into a tall saucepan, sprinkle gelatin on top, letting bloom. When you can’t see white anymore, whisk in. Heat over medium heat, until it goes from thick to thin, and the gelatin has dissolved.

Whisk in honey and vanilla, then remove from heat.

Ladle into silicone molds (I place them on a rimmed baking sheet). Let cool on counter, then chill for a few hours.

Pop out of molds, stash in an airtight container and use within 2 to 3 weeks.

My fave set of molds, or should I say the boys, is the Star Wars set.
