Pan Noodles with Tofu, Broccoli & Oranges

Find your wok for a quick dinner! This was perfect on a late summer evening when I didn’t want to be in the kitchen long.

Pan Noodles with Tofu, Broccoli & Oranges

Ingredients:

  • 3 7.7 ounce packages Fortune brand Mandarin Orange Yakisoba Noodles
  • 6 ounce package teriyaki baked tofu, cubed
  • 6 cups broccoli florets, bite size
  • 2 Tbsp coconut oil
  • 1 Tbsp sesame oil
  • 2 cups fresh Mandarin orange segments, in bite size pieces

Directions:

Heat a large wok over high heat. Add in coconut oil and broccoli. Cook for 5 minutes, moving broccoli around constantly.

Add in tofu and oranges, cook for another 2 minutes, moving constantly.

Meanwhile, prep Yakisoba noodles as directed on package (puncture noodle bag, heat for 1 minute in microwave). Open noodle bags, separate with fingers. Add to wok, and toss.

Sprinkle on flavor packets, and 1 1/2 cups water. Continue tossing to coat for 1 to 2 minutes.

Serves 5 to 6.

Notes: Serve with rice on the side (we made a savory carrot rice) or potstickers or similar, to round out dinner.
