Apple Oat Breakfast Bowl

Pacific Foods has an amazing new line of steel-cut oats. Single serving. Shelf-stable. No preservatives. Vegan & gluten-free friendly. I first was able to try the oats out last spring at Everything Food Conference, and happily brought home quite a few in my suitcase. There are 5 flavors to choose from, and yes, one is unsweetened (which I made an amazing savory oat risotto with last week). The flavored ones are not overly sweet either, and won’t leave you with a sugar crash an hour after breakfast.

I’d also recommend these packs for camping and weekends at cabins, as they are just so portable.

Apple Oat Breakfast Bowl

Ingredients:

Directions:

Peel and core apple, thickly slice.

Heat a small skillet over medium. Add in coconut oil, melt, and then add apple slices and salt. Saute until tender.

Meanwhile, open up oat package, and place in a microwave safe bowl. Heat for 1:30 to 2 minutes, stirring every 30 seconds.

Top with apples, including any remaining coconut oil. Sprinkle on 1-2 Tablespoons hemp seeds, and a drizzle of maple syrup, if desired.

Serves 1.
